Ingredient Oriental peanut oil, garlic(chopped), green chillies(seeded and cut into strips), ginger(finely chopped), boneless pork(cut into strips), shrimp paste, light soy sauce, fish sauce, sugar, water, firm semi-ripe mangoes(diced), unsalted peanuts(roughly pounded), salt, fresh coriander leaves(chopped)
Method of Preparation Heat the oil in a pan and fry the garlic. When it is fragrant add the green chillies and ginger. Fry a minuteor so and then add the pork strips and cook to brown. Stir in the shrimp paste, soy sauce and fish sauce. Add salt, sugar and water and cook till the meat is tender and the sauce is thick. Remove from heat and add the mango, peanuts and coriander. Serve hot.
