Prawns In Mango And Hot Garlic Sauce

Ingredient Jumbo prawns(cleaned, shelled and de-veined), sambal oelek or red chilli paste ), light soy sauce, dry sherry, oil(peanut or other), fresh ginger paste, garlic paste, mango puree, ripe mangoes(peeled and cut 2 large into strips).
For Garnish

sugar, mango puree, split almonds(blanched and toasted), spring onion brushes.

Method of Preparation Slit the prawns along the vein line to butterfly them and then put them in a mixture of sambal oelek, soy sauce and sherry and marinate for about 15 minutes. Heat oil in a wok or frying pan, add the ginger and garlic pastes. Stir till fragrant and brown. Then add the prawns and stir fry for a minute or so. Add the mango puree and strips and stir fry another minute. Serve on a heated platter, sprinkle, over with toasted almonds. Garnish with spring onion brushes and serve with steamed rice.
