Mango Bread

Ingredient Plain flour, sodium bicarbonate, salt, cinnamon powder, chopped walnuts, sultanas, dessicated coconut, soft butter or vegetable oil, sugar, eggs, vanilla extract, diced mango(sligtly under-ripe), lemon juice
Method of Preparation Prehest oven to 350 degree F/180 degree C. Grease one large loaf tin or two 8" loaf tins. Sift flour, soda, salt and cinnamon into a large mixing bowl. Add the nuts, sultanas and coconut. Separately, cream together butter and sugar, and add the eggs one at a time. Stir in the vanilla. Stir in the dry ingredients, mangoes and lemon juice and rind. Mix well then pour into the tin and let it stand for 20 minutes. Bake for 1 hour or until the loaf is done. Cool in tin for 10 minutes. Remove from the tin and cool on a wire rack. For best results, wrap in foil and serve it.
