Recipe of Mango Fruit

Jamaican Mango Preserve (Mangada)

Ingredient Ripe mangoes(Jamaican No. 11, 12 or Langra variety), sugar per cup of pulp, fresh ginger and lime juice per cup of pulp.
Method of Preparation Peel the mangoes and rub the pulp through a strainer. Measure the pulp by the cup and add to it in proportion the sugar, ginger and lime juice. Put this mixture in a stainless steel pot, bring to a boil and cook till it thickens. Remove the ginger with a slotted spoon and spread the remaining mixture 1" thick on a non-stick tray. Cool through well, preferably overnight in a refrigerator, and cut into squares or any other shapes desired.
