Mango Butter

Ingredient Ripe mango, lemon(juice and grated rind), unsalted butter, sugar, eggs(lightly beaten)
Method of Preparation Peel mango, scrape off pulp, mash and place in the top part of a double saucepan or heatproof bowl. Stir in the lemon rind and juice, and the butter, sugar and eggs. Stir constantly over simmering water until mixture thickens. Pour into hot jars and seal when cold.
