Recipe of Mango Fruit

Mango Gazpacho

Ingredient Firm ripe mangoes(peeled and cubed), white vinegar, orange juice, grapefruit juice, lemon juice, sugar, salt and pepper, Shrimps(peeled and de-veined), cucumber, onion, red bell pepper, parsley or fresh coriander leaves.
Method of Preparation Put 3 mangoes, vinegar, all the juices, sugar, salt and pepper into a blender or food processor and puree. Remove and pour into a large bowl. Put the shrimps into boiling water and cook for 3-4 minutes. Cool. Chop the cucumber, onion, bell pepper and parsley or coriander very fine and add to the mango mixture along with the reserved mango cubes and the shrimps. Serve chilled.
